Fall Wardrobe: Week 2

Sweats

Cheesy Loaded Sweet Potatoes

Super simple and fall like. This works so well as a base for SO many things. Ground beef or chicken, a can of beans.

Dinner on the table for less than 5!

Favorite Jeans

Marcella Hazan’s tomato sauce; with meatballs of your choice.

This is an ESSENTIAL part of every dinner wardrobe. It is almost as simple as opening a jar. Pureed tomatoes, butter, salt and sugar. That’s ALL.

This week, I used the InstantPot; placed items from the recipe below in the IP and did a Pressure Cook at low for 30 minutes.

Added meatballs (previously made or frozen work) and set it back to slow-cook at low for 3 hours.

Came back home and dinner was ready. Such a win!

Dress to Impress

Roasted butternut squash, ham and mascarpone.

Yes, this is pasta but one that is worthy of “fancy” status.

It is rich, decadent and  bursting with fall flavors.  I have been making this when the weather turns cold for at least 15 years. Yes, I think it is that good.

Pair with your favorite wine or a cider spritzer.
