Sweats

 

Quick Microwave Quesadilla

 

 

Place one tortilla on a plate, sprinkle shredded cheese add (chicken, beans etc). 

Place another tortilla on top.

Microwave for about 15 seconds and check; add time as needed.

Favorite Jeans

 

Sausage & Peppers

 

 

Sausage of your choice (1 pack works well for family of 4)

Slice 1-2 bell peppers and 1-2 onions depending on the “like” factor in your house.

Place sausage on bed of onions and peppers. Use an oven safe grill pan (if you have) OR a sheet pan if you don’t. Roast in oven at 400 for about 30 minutes; or based on package specifications. 

I love using a variety of color here–orange and yellow peppers, red onion gives this dish a ton of visual appeal.

Chicken Marbella

 

This dish is a classic. If the ’80s can be considered a classic, which they can. 

This hits all the right notes for a special fall meal. Added bonus is the aroma of the roast chicken in the house. 

 

Here’s the link to the recipe but I HIGHLY recommend the book. My mom gave me her copy about 15 years ago, when I started to get more into cooking, and I often reach for it. This truly has stood the test of time.
