Honeyed Chick Salad: Chick (en)+(pea)
A delicious way to "stretch" your food budget
- can Garbanzo/Chickpeas
- 1 cup Cooked chicken
- 3 honey
- 1/4 cup mayo
- salt and pepper to taste
- 2 tsp lime (optional)
- Preheat oven to 400. Rinse and drain can of chickpeas. Place in oven safe dish and sprinkle with salt and about 2 tsb of olive oil. Roast for about 30 minutes; this depends on how crispy you like them .Once cooked, set aside and allow to cool
- Cut up around 2-3 cups of cooked chicken; leftovers or rotisserie chicken work well! If you are starting from scratch prepare chicken to your preference.
- By hand (or with hand held mixer) blend mayo, honey, salt (to taste) and lime together in a medium size bowl. Add chicken and chickpeas (once cooled). Season with salt and pepper to taste and allow to chill in fridge.
- Optional: add other toppings: nuts, dried fruit, other fruit
